This mornings breakky was one of the best I’ve had for a long time. I’ve been on the road the past couple of weeks and haven’t had a kitchen or access to any organic produce so this morning I was so excited to wake up to a big kitchen, a thermomix and a fruit and veg shop just down the road.
I’ve always liked tomatoes in moderation but after this mornings creation I now officially LOVE them. Basically tomatoes are a great anti cancer food and they are even more protective when cooked… they are high in lycopene reducing the risk of pancreatic cancer, colorectal cancer, breast cancer and lung cancer. With a higher intake of tomatoes a 50% reduction in chances of prostate cancer occurs. They are also a great source of Vitamins A, C, K, folate and potassium. Tomatoes also have a relatively high water content, which makes them a filling food.
So it’s as simple as this…
Preheat the oven to 180 degrees, chop your tomatoes in half, sprinkle some dried basil and chili flakes then splash with some seasame oil. Cook in the oven for around 15 minutes and serve with what ever you please. I absolutely ADORED this and the healthy aspects of the tomato just make them even more of a pleasure to indulge in J
The meal besides the tomatoes was mixed quinoa with coconut butter, turmeric, cumin and paprika sautéed greens (asparagus, kale, zucchini), onions and mushrooms. Some raw grated beetroot, avo, a lemon wedge and some fresh basil.
