This was my crazy delicious super bowl from last nights dinner. It was basically your classic case of grab what ever you have in the pantry and veggie garden and throw it together!
I had cooked millet, tahini with chia seeds, avo, capsicum, sautéed miso and tamari spinach, kale and mushrooms. Parsnip and sweet potato roasted in coconut butter and a left over quinoa and almond ball. Splashed with coconut vinegar, this dinner was incredibly filling delicious and satisfying.
Did you know millet was the chief grain in China until rice became popular? It is gluten free, high in protein, fiber, iron, magnesium and potassium and is anti-fungal, warming and soothing for morning sickness or indigestion. Try cooking with a new grain weekly. There are so many amazing ones out there with all sorts of different benefits.
