Macadamia, coconut and raspberry bites.

Macadamia, coconut and raspberry bites.
These babies have been a HIT amongst friends and family. The photo of them on instagram and facebook went crazy and I've had SO many people asking me for the recipe sooooo here it is.

Crunchy chocolate and macadamia base
1/2 cup macadamias
1/2 cup hazelnuts
1 1/2 cup dates
1 spoonful coconut butter
1/2 cup sweet cocoa nibs

Blend until combined and press into cupcake pan lined with cup cake papers.You may need to add more or less dates and nuts depending on the consistency your blender blends to.

Macadamia, raspberry and coconut cream
30 g coconut milk
1 ½ cups dates dried
¾ cup desiccated coconut
20 g macadamia 
1-1/2 a cup of fresh or frozen raspberries

Blend all ingredients, except the the raspberries, until a smooth consistency is formed. Fold through raspberries then pour into pre-prepared bases and put into freezer for 1-2 hours. Store covered in fridge for 2-3 days.
