Apple, strawberry and coconut chocolate bites

Apple, strawberry and coconut chocolate bites.

Ever get to that time in the day where you're REALLY craving a sweet fix, something quick and easy to bite into and make your day feel just slightly more joyous and satisfying? Well these are the perfect treat, except unlike most treats, they're guilt free and nutritious. The chocolate factor in these scrumptious, bite-sized snacks is coconut chocolate butter. I either make my own or buy one from my local health food shop. If you’re having trouble finding one just make your own by combining pure maple syrup, cocoa powder, coconut butter and a splash of vanilla in a powerful food processor until a smooth consistency is formed. 1 cup of mixed raw nuts (walnuts, almonds, cashew)
1 cup of sultanas
1 tsp of honey
1 tsp of vanilla
1/2 cup of oat meal
1/2 cup of quinoa flakes
2 tsp of hazelnut butter or peanut butter

Combine all ingredients in food processor until a smooth consistency is formed. Put even amounts into mini muffin trays and shape into cups. Put into the oven on 180 degrees celsius for around 10 minutes, checking occasionally to see if they are starting to brown.

 3 granny smith apples
1 tsp of honey
5 strawberries
Splash of vanilla

Chop apples and strawberries and place into a saucepan with a few centimeters of water and the honey. Cook for around 4 minutes continuously stirring. Once soft, put into a food processor with the vanilla and puree.

Once the crusts are cool and crunchy, use ½ a teaspoon per cup of chocolate coconut butter (I used Loving Earths) and smooth into the base. Then using a teaspoon put the puree evenly into each cup, sprinkling coconut flakes to finish. Keep in fridge until they’re all gone. But to be honest, they probably won’t last long they’re so delicious!
