A bit of an insight into my life outside of food.

Seeing as though all of my posts have been about food I’ve decided to change it up a little bit and give you an insight into my passion that comes alongside food… that being the ocean and surfing.

Basically I teamed up with Choclo because I had a great connection in beliefs and passions with the amazing man behind it all, Roland. 

I’m a professional surfer and have been competing for the past 3 or so years and have had frustrating health issues of which ive only recently began to heal by my lifestyle and what I put into my system. I guess that’s where the passion for food came from as I’ve had endless amounts of sensitivities and food intolerances and I’ve had to teach myself how to make the most out of what I can eat. Food has honestly healed my body and is such a huge part of my career.

My weekly routine is pretty hectic. I generally do 2 sessions of training on Mondays and Wednesday… involving plyometrics, weights, paddle training, rotational work and a whole lot of other things. I do breathe enhancement training on Tuesdays and Thursdays and then other sessions get put in through the week depending on my energy levels and what’s on. It funny I used to dread training but now I just love it. It’s almost as exciting to me as my nutrition because I can feel how much it enhances my surfing and how much better I feel emotionally and physically. Yoga is also a huge part of my life now. For years my mum has been trying to get me into it and I’ve sort of had times here and there that I’ve liked it but always seemed to put it aside. Now I basically can't function without it… even 10 minutes of breathing or meditation seems to make my days flow so much easier. 

Anyway… this was a little bit of a ramble but I hope you enjoyed it J

Coconut and chocolate buckwheat crunchy chocolate cups

Coconut and chocolate buckwheat crunchy chocolate cups. 

This was a super spontaneous cook up last night before I went to bed I was craving making something scrumptious and this is what I came up with... Just note that they are seriously addictive. These are rough measurements so just experiment with quantities. 

1 1/2 cups of cocoa butter 
6 heaped tsp of cocoa powder 1/4 cup of coconut nectar (add more if you like it sweeter) 
1-2 tbsp of almond butter 
3 tsp of desiccated coconut per chocolate cup 
3 heaped tsp of Loving Earth chocolate buckinis per chocolate cup 

•melt cocoa butter, cocoa powder and coconut nectar over a very low heat in a saucepan. Once melted mix in almond butter until it's evenly through the mixture. 
•place 1 tsp of coconut and buckinis at the bottom of each cupcake pan 
•pour over chocolate mixture into each cup and then use a teaspoon to add the left over coconut and buckinis and stir evenly through the chocolate mix. Place in the freezer for 1-2 hours and then remove and keep in the fridge for up to 5 days.

Green Paprika Hommus

Green Paprika Hommus

I have a complete obsession with chickpeas at the moment… not only are they extremely versatile and tasty but are full of nutritional goodness.

This little pea is full of soluble and insoluble fibre, high in protein, full of manganese for energy production, full of iron, and stabilizes your blood sugar levels due to its low glycemic index.

This recipe is a new favorite of mine and I ate the tub in about a day.

2 cups of soaked chickpeas
5 tbsp of sesame or olive oil
4-6 tbsp of water
around 10 basil leaves
the juice of 1 and ½ lemons
2 tsp of paprika
1 tsp of cumin
2 tbsp of tahini (add a little more if you love tahini like me)

Blend all the ingredients together and there you have it

Cashew yogurt

Oh how I love yogurt... the creaminess, the texture, the flavors, the way it stirs through your porridge just perfectly... unfortunately with my sensitive stomach and dairy intolerance, I can't eat it. Usually I don't have cravings but recently yogurt has been on my mind and I just had to find a way to create the goodness so that I could re experience what I once adored having for breakfast daily. So here it is... my dairy free, sugar free, raw and vegan version of yogurt. 

You're going to need:
1 cup of soaked cashews
2 tsp of cinnamon
1 cup of water
4 dates

1 cup of mixed berries (if you want to make the berry version... its berry yummy)

Blend all together until smooth and creamy. Depending on your blender this may take up to 15 minutes but just keep blending until a creamy, smooth consistency forms. Enjoy J

Quinoa, sweet potato and black bean burgers with homemade seeded buns and an epic fig, kale and zucchini salad

These babies are pretty hearty and the perfect meal for refueling after a big day of physical activity.

Seeded buns

Makes 5 buns
1 and a 1/2 cups of sunflower seeds
1 and a 1/2 cups of pumpkin seeds
1 cup of ground flaxseeds
1 cup of almonds
3 tablespoons of coconut oil
1/2 a cup of water
salt to taste

Place one cup each of the almonds, pumpkin seeds, ground flaxseed and sunflowers seeds in a food processor and blend for a minute until smooth. Transfer the mix to a bowl and stir in the remaining half a cup each of pumpkin seeds and sunflower seeds along with the salt, coconut oil and water. Mix everything together, kneading the mixture together with your fingers for a few minutes until everything is sticky. Then make buns using your hands to carefully mould and flatten the bread, place on a baking tray and cook at 180C for 25 minutes. Once they are cooked remove them from the oven and allow to cool and set fully before eating.

Quinoa sweet potato and black bean patties

1 1/2 cups cooked quinoa
1 handful chopped coriander
1 cup ground flaxseed
1 cup cooked black turtle beans
3/4 cup grated sweet potato
2 tbspn tahini
juice of half a lime
1 tsp of cumin

Preheat the oven to 180 degrees. Combine all ingredients in a medium sized bowl and place into patties on a baking tray lined with baking paper. Drizzle coconut oil on top before placing in the oven for around 20 minutes (keep your eyes on them).

Fillings for the burgers
Whatever else your heart desires… a bit of relish or homemade sauce goes a treat with these babies.


1 zucchini sliced and grilled
5 large Kale leafs chopped and gently heated in pan
Cos lettuce
1/2 small cucumber chopped
2 fresh figs chopped 
¼ cup sunflower seeds

Put in a medium sized bowl and top with dressing.

Salad Dressing

1 tbspn mustard
1 tbspn tamari
1 tbspn tahini
3 tbspn water 
1 tbspn miso paste
1 garlic clove grated
1 tbspn honey

Mix together and pour over salad.
